Lesson ideas

To give your students a deeper understanding about meat quality and processing you could:

  • Walk your students through the Sheep Assessment Manual (MLA)
  • Ask students to watch the MSA sheepmeat video
  • arrange an abattoir visit to observe sheep meat processing and experience first hand the impact of genetics and management on carcase characteristics and meat quality
  • invite a butcher in to explain cuts of meat, including valuation to the class
  • highlight meat quality differences when comparing different breeds of sheep.
